Choshi is a working fishing port at the eastern tip of Chiba, and the fish market culture here is genuine — the morning auctions at Choshi Port draw real buyers, not tourists, and the tuna and horse mackerel coming off the boats here are some of the best in the Kanto region. Yamasa and Higeta, two of Japan's top soy sauce brands, operate full production here. For a man who speaks some Japanese and connects through food culture, this port-town directness works.
